  Larding

Larding is ancient method of food storage which gives us the word 'larder,' a cool, dry room for storing food.

Formally, 'lard' is pig fat, but any fairly solid fat will do. One takes a ceramic pot or jug with a lid, heats the fat, and smothers it in the fat. This does two things; it sterilizes the surface of the food being stored (and the pot it's stored in), and in creates a physical barrier which keeps out oxygen, bacteria, and mold spores.

This was used for long-term food storage quite effectively prior to refridgeration. Perhaps you might like to give it a try.
